🍂 My 5 Cozy Autumn Recipes Using October’s Seasonal Produce


Autumn has officially arrived — and with it, a colorful and flavorful harvest! October brings a variety of seasonal produce like squash, mushrooms, leeks, apples, and chestnuts that are just waiting to be turned into warm, comforting meals. 

Here are my 5 easy and delicious autumn recipes to help you make the most of what the season has to offer.

 

đŸ„Ł 1. Creamy Pumpkin & Coconut Curry Soup

Ingredients:

  • 1 small pumpkin or red kuri squash (potimarron)
  • 1 onion
  • 1 garlic clove
  • 1 cup coconut milk
  • 1 tsp mild curry powder
  • Salt, pepper, olive oil

Instructions:

  1. Chop the pumpkin into cubes (no need to peel if using red kuri).
  2. Sauté the onion and garlic in olive oil until soft.
  3. Add the pumpkin cubes and curry, season with salt and pepper.
  4. Cover with water and simmer for about 20 minutes.
  5. Blend until smooth, stir in coconut milk, and adjust seasoning.

✹ Top with roasted pumpkin seeds for extra crunch!

 

🧀 2. Leek Gratin with Goat Cheese & Walnuts

Ingredients:

  • 4 leeks
  • 3.5 oz (100 g) goat cheese
  • 1/2 cup walnuts
  • 3/4 cup heavy cream
  • Salt, pepper, nutmeg

Instructions:

  1. Clean and chop the leeks, then steam or boil until tender.
  2. Place them in a baking dish.
  3. Add slices of goat cheese and sprinkle with chopped walnuts.
  4. Pour cream over the top and season with salt, pepper, and a pinch of nutmeg.
  5. Bake at 350°F (180°C) for about 20 minutes until golden and bubbly.

🌰 Perfect as a vegetarian main or a side dish with roasted meat.

 

🍄 3. Autumn Mushroom Risotto

Ingredients:

  • 1 ÂŒ cups arborio rice
  • 10 oz (300 g) seasonal mushrooms (chanterelles, porcini, or mixed)
  • 1 onion
  • 1 garlic clove
  • 4 cups vegetable stock
  • 1/2 cup dry white wine
  • 1/2 cup grated parmesan
  • Butter and olive oil

Instructions:

  1. Sauté onion and garlic in butter and olive oil.
  2. Add the rice and stir until translucent.
  3. Pour in the wine and let it absorb.
  4. Gradually add the warm stock, stirring constantly.
  5. Sauté the mushrooms separately, then mix them in toward the end.
  6. Stir in the parmesan just before serving.

🍎 4. Root Veg & Apple Skillet

Ingredients:

  • 2 carrots
  • 2 parsnips
  • 1 sweet potato
  • 1 tart apple
  • Olive oil, fresh thyme, salt, pepper

Instructions:

  1. Peel and chop the vegetables into bite-sized pieces.
  2. Sauté in olive oil with thyme over medium heat.
  3. Add the chopped apple near the end of cooking.
  4. Let everything caramelize slightly and serve warm.

🍏 5. Rustic Apple & Chestnut Tart

Ingredients:

  • 1 sheet of pie crust
  • 3 apples
  • 1/3 cup sweetened chestnut cream (or plain chestnut purĂ©e)
  • 1 tbsp brown sugar
  • Cinnamon

Instructions:

  1. Roll out your pie crust on parchment paper.
  2. Spread the chestnut cream in the center.
  3. Arrange thin apple slices on top, sprinkle with sugar and cinnamon.
  4. Fold the edges in to create a rustic shape.
  5. Bake at 350°F (180°C) for about 35 minutes.

🍂 Serve warm with yogurt or vanilla ice cream.
