- 1 cup coconut milk
- 1 tsp mild curry powder

- Chop the pumpkin into cubes (no need to peel if using red kuri).
- Sauté the onion and garlic in olive oil until soft.
- Add the pumpkin cubes and curry, season with salt and pepper.
